I decided I’m not going to bore you with more details about the trailer hunt. At least a few of you out there are probably sick of hearing about these trailers that I NEVER post pictures of. I promise when we find one that we decide to keep for more than a week, I’ll give you a glimpse. Actually, I think Hubster and I decided that the renovation saga would live on the photo blog…. and I’m talking about it. So sorry. It’s just that it’s my FRIDAY! We’re taking off early for another trailer hunt.
We’ll be driving a bit, but not far enough to get us away from the Midwest heat. All I want to do when it’s this warm is eat salads and force Hubster to man the grill. And this is my new favorite dressing. It’s citrusy and tangy, but the pop of fresh ginger keeps it from getting too sweet. You could drizzle it over most any combo. Green onions, sunflower seeds and a brick of Parmesan are staples at our house.

Salad with orange ginger vinaigrette
1 orange
1 lemon
1 tsp fresh ginger
1 Tbsp olive oil
½ Tbsp soy sauce
½ Tbsp Dijon mustard
½ Tbsp honey
2 cups chopped lettuce
1 green onion
1 Tbsp sunflower seeds
1 block of parmesan cheese
Juice orange to get ¼ cup juice and lemon to get 1 tablespoon of juice. Grate ginger. Whisk juices, ginger, olive oil, soy sauce, mustard and honey together in a small bowl.
Place lettuce and green onion in a large bowl. Drizzle with vinaigrette and toss to combine. Divide between two bowls and top with seeds and shavings of cheese.
