Breakfast burrito

Hubster and I have been accused of being food snobs. Sadly, it’s probably true. I’ll turn my nose up at any suggestion to grab fast food or hit a bar for lunch. But there are exceptions to every rule. For example, I’m sad to admit that nothing sounds better after shooting a 14 hour wedding day then Taco Bell. Yes, Taco Bell. (Hangs head in shame.)

 

And if I’m going to bare it all, Hubster got me hooked on Sonic breakfast burritos a few years ago. Honestly, it wasn’t a hard sell. Give me anything with a little spice and a little cheese and I’m hooked.

The best part about this fast food gem is how easy it is to replicate at home with very few ingredients. We hit up the grocery store every two weeks. By the end of the cycle (like the Saturday morning before we go to the grocery store) we’re running low on full meals but have lots of bits and pieces to work with, like a quarter of a block of cheese and a bit of leftover onion.  So in the end I get a Sonic burrito with better ingredients (hello sharp cheddar cheese) and less guilt.

 

Breakfast burritos

10 tater tots
2-4 cooked sausage patties
1/2 jalapeno
2 Tbsp onion
2 Tbsp cilantro
1/2 cup shredded cheese
2-3 eggs
2 Tbsp milk
Salt and pepper
2 large tortillas

Cook tater tots according to package directions. Reheat sausage patties, if necessary, and slice each round in half. Slice 10 thin rounds from the jalapeno. Mince onion and cilantro. Scramble eggs with milk in a small bowl. Season with salt and pepper. Cook in a skillet over medium low heat until desired texture. Heat tortillas according to package directions. Split the ingredients between the two tortillas and serve immediately.
