Asian pork patties

I don’t know what is with me this week. I’ve sat down to write this blog at least 3 times and haven’t gotten much past “I don’t really love most things pork… except bacon.” While this is true, it doesn’t have the usual wit I like to think is evident here. I don’t have a grand story for this recipe, except to tell you that it works and it’s good. It stands out in that way because recently I’ve been on a run of bad recipes. In fact, I told Hubster the other night, “This recipe will probably be bad because I shot it for the blog and I’m not having good luck lately.” Sadly, I was right. So no precious story, no witty porcine remarks, just good patties for you today. 

 

Asian Pork Patties
Slightly modified from Cooking Light’s Chiang Mai Pork Patties

1 small yellow onion
½ cilantro, divided
3 jalapenos
1” piece of fresh ginger or 2 tsp of jarred ginger
1 lemon
3 garlic cloves
2 limes
1 lb ground pork
¾ tsp salt
10 Bibb or Boston lettuce leaves
¼ cup fresh mint leaves

Coarsely chop onion, place in a food processor, and pulse until finely chopped. Chop ¼ cup cilantro, and mince jalapenos and ginger. Juice lemon to get 2 Tbsp of juice. Add cilantro, peppers, ginger and juice to food processor. Add garlic and zest both limes into food processor. Process mixture until finely chopped. Add pork and salt, and then pulse until well combined.

Shape the mixture into patties (about 2 tablespoons per patty). Heat a large grill pan over high heat. Cook the patties for about 5 minutes on each side or until done. Meanwhile, cut the limes into wedges. Mince the remaining cilantro and mint.

Top each lettuce leaf with 1 or 2 patties (depending on the size of your leaves.) Sprinkle each patty with cilantro and mint. Serve with lime wedges.
