Roasted green beans

This week has been a whirlwind of baking cookies and trying out new recipes, which have been failures across the board (the meals not the cookies). I had high hopes for a chicken strudel recipe, but it turned out to be a sad, dry, and flavorless creation. I’m trying to pull together a menu for my birthday dinner. And so far all I have are these green beans…


No main dish, no signature drink, no layer cake… just green beans. But these green beans are totally awesome.

Oh and if you’re looking for a side dish for a holiday meal, these would be great too.


Can you tell I’m not mentally ready for the holidays? I made 3 types of cookies and didn’t shoot any of them. This was partially due to the war zone my kitchen resembled. Apparently trying to make dinner and mix cookie dough while dishes from last night are scattered about your counters is not optimal for pictures. Who knew?


Roasted Green Beans

12 oz green beans
2 tsp olive oil
Garlic powder
Salt and pepper

Preheat oven to 425 degrees. Line a baking sheet with foil. Wash and trim green beans. Place the beans on the baking sheet and drizzle with oil. Toss beans to coat. Sprinkle with garlic powder, salt and pepper. Bake for 10 minutes. Shake the pan and then bake for 5 more minutes.
